Ingredients
- 1 medium head of cauliflower (about 2 to 3 cups riced)
- 1 cup shredded mozzarella cheese
- 1 large egg
Instructions
- Remove the leaves and stem from the cauliflower and cut it into florets. Place the florets in a food processor and pulse until you achieve a rice-like texture.
- Transfer the riced cauliflower to a microwave-safe bowl and microwave on high for about 5-7 minutes, or until softened. Let it cool slightly.
- Once cooled, place the cauliflower in a clean kitchen towel or cheesecloth and squeeze out as much moisture as possible. This step is crucial for achieving a crispy texture.
- In a large bowl, combine the riced cauliflower, shredded mozzarella cheese, and egg. Mix until well combined.
- Spread the mixture onto the prepared baking sheet in a rectangular shape, about ½ inch thick.
- Bake in the preheated oven for 15-20 minutes, or until the edges are golden brown and the center is firm.
- Remove from the oven and let it cool for a few minutes before slicing into breadsticks.
Notes
- For added flavor, mix in 1 teaspoon of garlic powder or Italian seasoning into the cauliflower mixture before baking.
- Serve with marinara sauce or ranch dressing for dipping to enhance the flavor experience.
