  • 1 can (15 ounces) butter beans, drained and rinsed

  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup grated Parmesan cheese (optional)
  • Juice of 1/2 lemon

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent.
  2. Stir in the minced garlic and cook for an additional 1 minute until fragrant.
  3. Add the drained butter beans, diced tomatoes (with juice), oregano, basil, red pepper flakes, salt, and pepper. Stir to combine.
  4. Bring the mixture to a simmer and cook for about 10-15 minutes, stirring occasionally, until heated through and slightly thickened.
  5. Remove from heat and stir in the fresh parsley, lemon juice, and Parmesan cheese if using.
