A quick and delicious recipe for Tuscan-style butter beans that can be made in just 30 minutes.
Ingredients
- 1 can (15 ounces) butter beans, drained and rinsed
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 small onion, diced
- 1 can (14.5 ounces) diced tomatoes, undrained
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
- 1/4 cup fresh parsley, chopped
- 1/4 cup grated Parmesan cheese (optional)
- Juice of 1/2 lemon
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent.
- Stir in the minced garlic and cook for an additional 1 minute until fragrant.
- Add the drained butter beans, diced tomatoes (with juice), oregano, basil, red pepper flakes, salt, and pepper. Stir to combine.
- Bring the mixture to a simmer and cook for about 10-15 minutes, stirring occasionally, until heated through and slightly thickened.
- Remove from heat and stir in the fresh parsley, lemon juice, and Parmesan cheese if using.
- Serve warm, garnished with extra parsley and cheese if desired.
Notes
- For a creamier texture, add a splash of vegetable broth or a dollop of cream cheese while cooking.
- To customize, try adding spinach or kale during the last few minutes of cooking for added nutrition and color.
