Ingredients

For the Broth & Chicken:

  • 2 boneless, skinless chicken breasts (about 350g) (optional)
  • 3 cloves garlic, minced
  • 1 tablespoon red Thai curry paste (adjust to taste)
  • 1 tablespoon light soy sauce
  • 2 tablespoons peanut butter (smooth or crunchy)
  • 400ml coconut milk
  • 400ml chicken broth (or use a stock cube)
  • 300g udon noodles (or preferred noodles)

Toppings & Garnish:

  • A handful of mangetouts (snow peas), for crunch
  • A small bunch of coriander (cilantro), roughly chopped
  • 2 teaspoons chili oil (adjust for spice tolerance)
  • 4 lime wedges, for a zesty finish

Instructions

  1. Sear the Chicken (Optional)
    • Heat oil in a large pan over medium heat.
    • Sear chicken for 5 minutes per side until golden.
    • Remove and set aside (it will finish cooking in the broth).
  2. Build the Spicy Peanut Base
    • In the same pan, sauté garlic, red curry paste, soy sauce, and peanut butter for 1 minute.
    • Pour in coconut milk and chicken broth, stirring to combine.
    • Bring to a gentle boil, then reduce heat to low.
  3. Simmer and Infuse Flavors
    • If using chicken, return it to the pan and cover.
    • Let it simmer for 10-15 minutes until fully cooked.
    • Remove, slice, and set aside.
  4. Cook the Noodles & Final Touches
    • Taste the broth and adjust seasoning if needed.
    • Add udon noodles and cook according to package instructions.
  5. Assemble & Serve
    • Divide noodles and broth into bowls.
    • Top with sliced chicken, mangetouts, coriander, chili oil, and a generous squeeze of lime.
