Ingredients
For the Broth & Chicken:
- 2 boneless, skinless chicken breasts (about 350g) (optional)
- 3 cloves garlic, minced
- 1 tablespoon red Thai curry paste (adjust to taste)
- 1 tablespoon light soy sauce
- 2 tablespoons peanut butter (smooth or crunchy)
- 400ml coconut milk
- 400ml chicken broth (or use a stock cube)
- 300g udon noodles (or preferred noodles)
Toppings & Garnish:
- A handful of mangetouts (snow peas), for crunch
- A small bunch of coriander (cilantro), roughly chopped
- 2 teaspoons chili oil (adjust for spice tolerance)
- 4 lime wedges, for a zesty finish
Instructions
- Sear the Chicken (Optional)
- Heat oil in a large pan over medium heat.
- Sear chicken for 5 minutes per side until golden.
- Remove and set aside (it will finish cooking in the broth).
- Build the Spicy Peanut Base
- In the same pan, sauté garlic, red curry paste, soy sauce, and peanut butter for 1 minute.
- Pour in coconut milk and chicken broth, stirring to combine.
- Bring to a gentle boil, then reduce heat to low.
- Simmer and Infuse Flavors
- If using chicken, return it to the pan and cover.
- Let it simmer for 10-15 minutes until fully cooked.
- Remove, slice, and set aside.
- Cook the Noodles & Final Touches
- Taste the broth and adjust seasoning if needed.
- Add udon noodles and cook according to package instructions.
- Assemble & Serve
- Divide noodles and broth into bowls.
- Top with sliced chicken, mangetouts, coriander, chili oil, and a generous squeeze of lime.
