Ingredients

  • 4 salmon fillets (thawed if frozen)
  • 2 cups broccoli florets (about 1 bunch)
  • 1 red bell pepper, seeded and chopped
  • 1 small zucchini, sliced into half-moons
  • 1 small yellow onion, roughly chopped
  • 3 tablespoons olive oil
  • 1 tablespoon lemon juice (fresh or bottled)
  • 1 ½ teaspoons garlic powder
  • 1 ½ teaspoons paprika
  • ¾ teaspoon salt
  • ½ teaspoon black pepper

Instructions

  1. Preheat & Prep:
    Preheat oven to high broil and line a baking sheet with parchment paper.
  2. Seasoning Magic:
    Whisk olive oil, lemon juice, garlic powder, paprika, salt, and black pepper in a large bowl.
  3. Salmon Setup:
    Place salmon fillets skin-side down on the prepared baking sheet and brush with half of the seasoning mixture.
  4. Veggie Toss:
    Toss broccoli, bell pepper, zucchini, and onion with remaining seasoning in the bowl until well-coated.
  5. Bake to Bliss:
    Arrange veggies around salmon fillets. Broil for 10-14 minutes or until salmon reaches an internal temperature of 145ºF (63ºC) and flakes easily.
