Ingredients
- 4 salmon fillets (thawed if frozen)
- 2 cups broccoli florets (about 1 bunch)
- 1 red bell pepper, seeded and chopped
- 1 small zucchini, sliced into half-moons
- 1 small yellow onion, roughly chopped
- 3 tablespoons olive oil
- 1 tablespoon lemon juice (fresh or bottled)
- 1 ½ teaspoons garlic powder
- 1 ½ teaspoons paprika
- ¾ teaspoon salt
- ½ teaspoon black pepper
Instructions
- Preheat & Prep:
Preheat oven to high broil and line a baking sheet with parchment paper. - Seasoning Magic:
Whisk olive oil, lemon juice, garlic powder, paprika, salt, and black pepper in a large bowl. - Salmon Setup:
Place salmon fillets skin-side down on the prepared baking sheet and brush with half of the seasoning mixture. - Veggie Toss:
