Ingredients

For the Brownie Cups:

  • ½ cup butter
  • 1 cup white sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • ⅓ cup unsweetened cocoa powder
  • ½ cup all-purpose flour
  • ¼ teaspoon salt
  • ¼ teaspoon baking powder

For the Frosting:

  • ½ cup (1 stick) unsalted butter, softened
  • 34 cups powdered sugar
  • 1 tablespoon heavy cream or milk
  • 1 teaspoon vanilla or almond extract
  • Green food coloring gel
  • Gold sprinkles (gold stars or other edible gold decorations)

Instructions

  1. Preheat & Prep: Preheat your oven to 375°F (190°C) and grease a mini muffin pan.
  2. Mix the Magic: Melt the butter and mix it with sugar, eggs, and vanilla using a wooden spoon.
  3. Dry Ingredients: In a separate bowl, whisk together the flour, cocoa powder, salt, and baking powder. Gradually stir this into the wet mixture—do not overmix.
  4. Fill & Bake: Scoop about 2 teaspoons of batter into each muffin cavity, filling them halfway. Bake for 15-18 minutes, or until they pull away from the edges and a toothpick comes out clean.
  5. Create the Gold Pocket: Once cooled, use the back of a wooden spoon to press down the center of each brownie cup, creating a small indent. Fill with gold sprinkles.
  6. Whip Up the Frosting: Beat the butter with 2 cups of powdered sugar in a mixer using a paddle attachment. Gradually add more powdered sugar, then mix in cream and food coloring. Beat for 2-3 minutes until light and fluffy.
  7. Pipe & Hide the Treasure: Use a piping bag with a fluted tip to swirl the frosting on top of each brownie cup, covering the gold surprise. Decorate with shamrock sprinkles or more gold accents.
