These Hidden Pot of Gold Brownie Cups are a festive treat perfect for St. Patrick’s Day! Rich, chocolatey brownie cups hide a golden surprise inside, topped with a swirl of green frosting and shimmering gold sprinkles. A magical bite every time!
Ingredients
For the Brownie Cups:
- ½ cup butter
- 1 cup white sugar
- 2 eggs
- 1 teaspoon vanilla extract
- ⅓ cup unsweetened cocoa powder
- ½ cup all-purpose flour
- ¼ teaspoon salt
- ¼ teaspoon baking powder
For the Frosting:
- ½ cup (1 stick) unsalted butter, softened
- 3–4 cups powdered sugar
- 1 tablespoon heavy cream or milk
- 1 teaspoon vanilla or almond extract
- Green food coloring gel
- Gold sprinkles (gold stars or other edible gold decorations)
Instructions
- Preheat & Prep: Preheat your oven to 375°F (190°C) and grease a mini muffin pan.
- Mix the Magic: Melt the butter and mix it with sugar, eggs, and vanilla using a wooden spoon.
- Dry Ingredients: In a separate bowl, whisk together the flour, cocoa powder, salt, and baking powder. Gradually stir this into the wet mixture—do not overmix.
- Fill & Bake: Scoop about 2 teaspoons of batter into each muffin cavity, filling them halfway. Bake for 15-18 minutes, or until they pull away from the edges and a toothpick comes out clean.
- Create the Gold Pocket: Once cooled, use the back of a wooden spoon to press down the center of each brownie cup, creating a small indent. Fill with gold sprinkles.
- Whip Up the Frosting: Beat the butter with 2 cups of powdered sugar in a mixer using a paddle attachment. Gradually add more powdered sugar, then mix in cream and food coloring. Beat for 2-3 minutes until light and fluffy.
- Pipe & Hide the Treasure: Use a piping bag with a fluted tip to swirl the frosting on top of each brownie cup, covering the gold surprise. Decorate with shamrock sprinkles or more gold accents.
