Ingredients

  • All-purpose flour (1½ cups + 1 tbsp, spooned and leveled)
  • Baking powder (1 tsp)
  • Baking soda (½ tsp)
  • Salt (¼ tsp)
  • Unsalted butter (½ cup, softened but cool)
  • Granulated sugar (½ cup)
  • Brown sugar (⅓ cup, lightly packed, soft, and fresh)
  • Egg (1 large, cold, straight from the fridge)
  • Pure vanilla extract (2 tsp)
  • Easter/spring M&M’s (¾ cup, plus extra for topping if desired)
  • White chocolate chips or chunks (½ cup, plus extra for topping if desired)
  • Pastel sprinkles (¼ cup)

Instructions

  1. Preheat the Oven
    • Set the oven to 350°F and line two baking sheets with parchment paper.
  2. Mix Dry Ingredients
    • In a bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
  3. Cream Butter and Sugars
    • In a separate bowl, using a hand or stand mixer, beat the butter and both sugars for 1-2 minutes until light and fluffy.
  4. Add Wet Ingredients
    • Mix in the egg and vanilla extract until combined. Scrape the sides of the bowl as needed.
  5. Combine Wet and Dry Ingredients
    • On low speed, gradually mix in the dry ingredients until just combined.
  6. Fold in Mix-Ins
    • Gently fold in M&M’s and white chocolate chips.
  7. Prepare Dough Balls
    • Place sprinkles in a shallow bowl.
    • Scoop cookie dough into 1½ to 2½ tablespoon portions and lightly press the tops into the sprinkles.
  8. Chill or Bake Immediately
    • Arrange dough balls on prepared baking sheets, leaving space for spreading.
    • For thicker cookies, chill in the fridge for 20 minutes or bake immediately.
  9. Bake the Cookies
    • Bake for 8-11 minutes, until the edges are set but the centers remain slightly underdone.
  10. Perfecting the Shape
  • Swirl a round glass or bowl over the cookies immediately after baking for a perfectly round shape.
  • Optionally, use the back of a spoon to nudge edges inward.
  1. Cool and Decorate
  • Cool cookies completely on wire racks.
  • Press extra M&M’s or white chocolate chips on top while still warm, if desired.
