Ingredients
- All-purpose flour (1½ cups + 1 tbsp, spooned and leveled)
- Baking powder (1 tsp)
- Baking soda (½ tsp)
- Salt (¼ tsp)
- Unsalted butter (½ cup, softened but cool)
- Granulated sugar (½ cup)
- Brown sugar (⅓ cup, lightly packed, soft, and fresh)
- Egg (1 large, cold, straight from the fridge)
- Pure vanilla extract (2 tsp)
- Easter/spring M&M’s (¾ cup, plus extra for topping if desired)
- White chocolate chips or chunks (½ cup, plus extra for topping if desired)
- Pastel sprinkles (¼ cup)
Instructions
- Preheat the Oven
- Set the oven to 350°F and line two baking sheets with parchment paper.
- Mix Dry Ingredients
- In a bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
- Cream Butter and Sugars
- In a separate bowl, using a hand or stand mixer, beat the butter and both sugars for 1-2 minutes until light and fluffy.
- Add Wet Ingredients
- Mix in the egg and vanilla extract until combined. Scrape the sides of the bowl as needed.
- Combine Wet and Dry Ingredients
- On low speed, gradually mix in the dry ingredients until just combined.
- Fold in Mix-Ins
- Gently fold in M&M’s and white chocolate chips.
- Prepare Dough Balls
- Place sprinkles in a shallow bowl.
- Scoop cookie dough into 1½ to 2½ tablespoon portions and lightly press the tops into the sprinkles.
- Chill or Bake Immediately
- Arrange dough balls on prepared baking sheets, leaving space for spreading.
- For thicker cookies, chill in the fridge for 20 minutes or bake immediately.
- Bake the Cookies
- Bake for 8-11 minutes, until the edges are set but the centers remain slightly underdone.
- Perfecting the Shape
- Swirl a round glass or bowl over the cookies immediately after baking for a perfectly round shape.
- Optionally, use the back of a spoon to nudge edges inward.
- Cool and Decorate
- Cool cookies completely on wire racks.
- Press extra M&M’s or white chocolate chips on top while still warm, if desired.
