With a crisp golden crust and a warm, bubbling fruit filling, this cobbler is simple yet irresistibly delicious. Serve it warm with vanilla ice cream or custard for the perfect indulgence!

Ingredients

For the Fruit Filling:

  • 5 peaches, cut into wedges
  • 125 g (1 cup) fresh raspberries
  • 75 g (½ cup) caster sugar

For the Buttery Cobbler Topping:

  • 90 g (½ cup) cold butter (salted or unsalted)
  • 90 g (⅔ cup) caster sugar
  • 140 g (1 cup) plain flour
  • 1 teaspoon baking powder
  • 2 teaspoons milk
  • 2 tablespoons flaked almonds
  • Zest of 1 lemon

Instructions

  1. Set the Stage
    • Preheat your oven to 160°C (fan) or 170°C (conventional).
  2. Fruit Magic
    • Slice peaches into chunky wedges.
    • In a bowl, toss them with raspberries and caster sugar.
    • Transfer the mixture to an ovenproof baking dish.
  3. The Perfect Topping
    • In a large bowl, mix flour, baking powder, and sugar.
    • Rub in cold butter using your fingertips until the mixture resembles coarse crumbs.
    • Stir in milk until the dough comes together like soft cookie dough.
  4. Assembly & Final Touch
    • Spoon the cobbler dough over the fruit.
    • Sprinkle with flaked almonds and a little demerara sugar (optional) for extra crunch.
  5. Bake to Perfection
    • Bake for 25-30 minutes until the fruit is bubbling and the topping is golden brown.

Notes

  • Use frozen fruit if fresh isn’t available—just extend baking time by a few minutes.
  • Swap peaches for nectarines or plums for a different twist.
  • For extra crispiness, sprinkle a bit of raw sugar over the cobbler topping before baking.
  • Best served warm, but also delicious at room temperature!
