This African Chicken Peanut Stew is rich, hearty, and full of bold flavor. Tender chicken simmers in a velvety sauce made from natural peanut butter, tomatoes, and spices — a comforting, protein-packed dish with just the right amount of heat. Perfect with rice or warm flatbread.
Ingredients

1.5 lbs chicken thighs (or drumsticks, wings, or breast)

1/2 cup tomato sauce (or tomato paste or blended fresh tomatoes)

1 red bell pepper, chopped

1/2 onion, chopped

1/2 cup natural unsweetened peanut butter

1/4 cup olive oil (or preferred cooking oil)

1 teaspoon cayenne pepper

1 teaspoon bouillon powder (or maggi cubes)

1 teaspoon black pepper

1 teaspoon salt (or to taste)

2 cups chicken stock (or vegetable stock or water)
Instructions

Rinse and pat dry the chicken. Season both sides with salt and black pepper.

Heat olive oil in a large skillet over medium-high heat. Sear the chicken on both sides until browned, about 4–5 minutes per side. Remove and set aside.

In a soup pot or Dutch oven, add a bit more oil if needed. Sauté chopped onions and red bell pepper for 3–4 minutes until softened.

Stir in the tomato sauce, cayenne pepper, bouillon powder, and black pepper. Let simmer for 2–3 minutes to build flavor.

Add chicken stock and return the browned chicken to the pot. Simmer for about 10 minutes.

Stir in the peanut butter until well combined. Simmer for another 10–15 minutes, or until the sauce thickens and the chicken is cooked through.

Adjust seasoning to taste. Serve hot over rice, couscous, or with crusty bread.
