Ingredients
- 1 tablespoon extra-virgin olive oil
- 1 pound bacon, diced
- 1 medium sweet onion, diced
- 2 links cooked Italian chicken sausage, diced small
- 6 large eggs, lightly beaten
- 1 ½ cups cottage cheese (4%)
- 4 cups shredded hash brown potatoes
- 2 cups Mexican blend cheese, shredded
- 1 ¼ cups white cheddar cheese, shredded
- ¼ teaspoon kosher salt
- ⅛ teaspoon black pepper
- Scallions, finely diced (for garnish)
Instructions
- Prepare the Baking Dish
- Preheat the oven to 350°F. Coat a 9×13-inch baking dish with nonstick cooking spray.
- Cook the Bacon
- Heat olive oil in a large nonstick skillet over medium-high heat. Add the diced bacon and cook until crispy. Remove with a slotted spoon and drain on a paper towel-lined plate.
- Sauté Onion and Sausage
- Drain all but 2 tablespoons of the bacon grease. Sauté diced onion and chicken sausage in the skillet for about 3 minutes, or until the onion is soft and translucent. Remove from heat.
- Combine Ingredients
- In a large bowl, mix together the cooked bacon, sautéed onion and sausage, eggs, cottage cheese, hash browns, Mexican blend cheese, white cheddar cheese, salt, and pepper. Stir until well combined.
- Assemble the Casserole
- Spread the mixture evenly into the prepared baking dish. Cover with foil if refrigerating overnight.
- Bake
- Bake uncovered for 45-60 minutes, or until the eggs are set and the edges are golden brown.
- Serve
- Let the casserole rest for 10-15 minutes. Garnish with diced scallions and serve warm.
