Ingredients

Core Ingredients:

  • Ground beef – 1 lb
  • Onion (chopped) – 1 medium
  • Garlic (minced) – 2 cloves
  • Potatoes (diced) – 3 cups
  • Carrots (diced) – 2 cups
  • Celery (diced) – 1 cup
  • Corn kernels (fresh or frozen) – 1 cup
  • Diced tomatoes (undrained) – 1 can (14.5 oz)
  • Beef broth – 1 cup
  • Shredded cheddar cheese – 1 cup
  • Salt – 1 tsp
  • Black pepper – ½ tsp
  • Dried thyme – 1 tsp
  • Dried rosemary – 1 tsp
  • Olive oil – 1 tbsp

Instructions

Preheat Your Oven

  • Set your oven to 375°F (190°C).

2. Cook the Ground Beef

  • Heat olive oil in a large skillet over medium heat.
  • Add the ground beef and cook until browned, breaking it into smaller pieces as it cooks.
  • Remove the beef using a slotted spoon and set aside.

3. Sauté the Aromatics

  • In the same skillet, sauté the chopped onion and minced garlic until the onion is translucent, about 3–4 minutes.

4. Add the Vegetables

  • Stir in the diced potatoes, carrots, and celery.
  • Cook for about 5 minutes, stirring occasionally, to begin softening the vegetables.

5. Combine Ingredients

  • Add the corn kernels, cooked ground beef, diced tomatoes (with juice), and beef broth to the skillet.
  • Season with salt, black pepper, thyme, and rosemary. Stir to combine.

6. Transfer to a Baking Dish

  • Grease a 9×13-inch baking dish and pour the skillet mixture into the dish. Spread it out evenly.

7. Bake Covered

  • Cover the dish with aluminum foil and bake for 30 minutes.

8. Add Cheddar Topping

  • Remove the foil and sprinkle shredded cheddar cheese evenly over the top.
  • Return the dish to the oven and bake uncovered for an additional 10–15 minutes, until the cheese is melted and bubbly.

9. Rest and Serve

  • Let the bake rest for a few minutes after removing it from the oven.
  • Serve warm and enjoy!

Notes

  • Fresh Herbs: Replace dried thyme and rosemary with fresh for enhanced flavor.
  • Texture Tip: Parboil potatoes for softer results.
  • Custom Toppings: Experiment with different cheeses, like mozzarella or gouda.
