Ingredients
- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup granulated sugar
- 1 (8-ounce) package cream cheese, softened
- 1 cup powdered sugar
- 1 cup sour cream
- 1/2 cup apple cider
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1/4 teaspoon salt
- 3 large eggs
Instructions
- Preheat your oven to 325°F.
- In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined, then press the mixture firmly into the bottom of a 9-inch springform pan to form the crust.
- Bake for 10 minutes, then remove from the oven and let cool.
- In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
- Gradually add the powdered sugar, mixing until well incorporated.
- Add the sour cream, apple cider, vanilla extract, cinnamon, nutmeg, ginger, and salt. Mix until smooth.
- Add the eggs one at a time, mixing on low speed until just combined after each addition.
- Pour the cheesecake filling over the cooled crust in the springform pan.
- Bake for 50-60 minutes, or until the edges are set and the center is slightly jiggly.
- Turn off the oven and leave the cheesecake inside for an additional hour.
- Remove from the oven and let cool to room temperature, then refrigerate for at least 4 hours or overnight before serving.
Notes
- This recipe serves 10.
- For a twist, try adding a layer of caramel sauce on top before serving.
- You can also substitute the apple cider with pumpkin puree for a pumpkin spice cheesecake variation.
