Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 1 (8-ounce) package cream cheese, softened
  • 1 cup powdered sugar
  • 1 cup sour cream
  • 1/2 cup apple cider
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 3 large eggs

Instructions

  1. Preheat your oven to 325°F.
  2. In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined, then press the mixture firmly into the bottom of a 9-inch springform pan to form the crust.
  3. Bake for 10 minutes, then remove from the oven and let cool.
  4. In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
  5. Gradually add the powdered sugar, mixing until well incorporated.
  6. Add the sour cream, apple cider, vanilla extract, cinnamon, nutmeg, ginger, and salt. Mix until smooth.
  7. Add the eggs one at a time, mixing on low speed until just combined after each addition.
  8. Pour the cheesecake filling over the cooled crust in the springform pan.
  9. Bake for 50-60 minutes, or until the edges are set and the center is slightly jiggly.
  10. Turn off the oven and leave the cheesecake inside for an additional hour.
  11. Remove from the oven and let cool to room temperature, then refrigerate for at least 4 hours or overnight before serving.
