Ingredients
- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup granulated sugar
- 2 (8-ounce) packages cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup sour cream
- 2 cups peeled and diced apples (about 2 medium apples)
- 1 teaspoon ground cinnamon
- 1/4 teaspoon nutmeg
- 1/2 cup brown sugar
- 1 cup rolled oats
- 1/2 cup all-purpose flour
- 1/2 cup chopped pecans or walnuts (optional)
- 1/4 cup unsalted butter, softened
Instructions
- Preheat the oven to 325°F. Grease a 9-inch springform pan.
- In a medium bowl, combine graham cracker crumbs, melted butter, and 1/4 cup granulated sugar. Press the mixture firmly into the bottom of the prepared springform pan. Bake for 10 minutes, then remove from the oven and let cool.
- In a large mixing bowl, beat the softened cream cheese with 1 cup granulated sugar and vanilla extract until smooth and creamy. Add the eggs one at a time, mixing well after each addition. Stir in the sour cream until fully combined.
- In another bowl, toss the diced apples with cinnamon and nutmeg. Fold the apples into the cream cheese mixture, then pour the filling over the cooled crust in the springform pan.
- In a separate bowl, mix together brown sugar, rolled oats, flour, and chopped nuts (if using). Cut in the softened butter until the mixture resembles coarse crumbs. Sprinkle this topping evenly over the cheesecake filling.
- Bake the cheesecake for 55-60 minutes or until the center is set but still slightly jiggly. Turn off the oven and crack the door, allowing the cheesecake to cool in the oven for 1 hour. Remove from the oven and let cool to room temperature, then refrigerate for at least 4 hours or overnight before serving.
