Ingredients
- 2 cups graham cracker crumbs
- 1 cup Biscoff cookie crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup granulated sugar
- 2 (8-ounce) packages cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup sour cream
- 2 cups diced apples (about 2 medium apples)
- 1 teaspoon cinnamon
- 1 tablespoon lemon juice
- 1/2 cup Biscoff spread
- 1/2 cup rolled oats
- 1/2 cup brown sugar
Instructions
- Preheat your oven to 350°F.
- In a mixing bowl, combine graham cracker crumbs, Biscoff cookie crumbs, melted butter, and granulated sugar. Mix until well combined.
- Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes, then remove from the oven and let cool.
- In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add powdered sugar and vanilla extract, mixing until well combined.
- Add sour cream and mix until smooth and creamy.
- In another bowl, toss the diced apples with cinnamon and lemon juice. Spread the apple mixture evenly over the cooled crust.
- Pour the cream cheese mixture over the apples, smoothing it out with a spatula.
- In a small bowl, combine rolled oats, brown sugar, and Biscoff spread. Mix until crumbly. Sprinkle this mixture evenly over the cheesecake layer.
- Bake the cheesecake for 45-50 minutes, or until the center is set and the edges are lightly golden.
- Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for 1 hour.
- Afterward, refrigerate for at least 4 hours or overnight for best results.
- Slice and serve chilled.
