Ingredients

  • 3 cups peeled and chopped apples (about 3 medium apples)
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup chopped walnuts or pecans (optional)
  • 1 cup raisins (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
  2. In a large mixing bowl, combine the chopped apples, granulated sugar, brown sugar, and vegetable oil. Mix well until combined.
  3. Add the eggs and vanilla extract to the apple mixture, stirring until fully incorporated.
  4. In another bowl, whisk together the flour, baking soda, baking powder, cinnamon, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  6. Fold in the nuts and raisins if using.
  7. Pour the batter into the prepared baking pan and spread it evenly.
  8. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
