Ingredients
For the Dough:
- 3 cups all-purpose flour
- ½ cup canola oil, divided
- ¾ cup warm water (120°F)
- 1 large egg, beaten
For the Filling:
- 1½ cups fresh breadcrumbs, toasted in butter
- 6 cups (6 medium) apples, peeled and chopped (Granny Smith recommended)
- ½ cup raisins (optional)
- 1 cup sugar
- 1½ teaspoons ground cinnamon
- ⅓ cup melted butter
- 3 tablespoons sour cream
Instructions
- Prepare the Dough:
- In a large bowl, mix the flour, ¼ cup canola oil, and warm water.
- Add the beaten egg and knead on a floured surface for 8–10 minutes until smooth and elastic.
- Cover with a damp cloth and let rest for 30 minutes.
- Prepare the Filling:
- Toast the breadcrumbs in melted butter over medium heat until golden brown, then set aside to cool.
- In a large bowl, mix apples, sugar, cinnamon, and raisins (if using).
- Stir in the toasted breadcrumbs and sour cream until well combined.
- Roll Out the Dough:
- Preheat the oven to 375°F (190°C).
- Roll the dough on a lightly floured surface as thin as possible, ideally transparent.
- Transfer the dough onto a clean, floured kitchen towel or parchment paper for easy rolling.
- Assemble the Strudel:
- Spread the apple filling evenly over the dough, leaving a 1-inch border.
- Use the towel or parchment paper to gently roll the dough into a log, starting from one of the shorter edges.
- Seal the edges by pinching them together to keep the filling inside.
- Bake the Strudel:
- Place the rolled strudel seam side down on a parchment-lined baking sheet.
- Brush the top with the remaining ¼ cup canola oil for a golden crust.
- Bake for 35–45 minutes, or until the crust is golden brown and crispy.
- Cool and Serve:
- Let the strudel cool for 10–15 minutes.
- Dust with powdered sugar before slicing and serve warm or at room temperature.
Notes
- For a shortcut, use store-bought phyllo dough or puff pastry.
- To prevent soggy dough, ensure the breadcrumbs are toasted and spread evenly.
- Add chopped nuts, dried cranberries, or a splash of rum for extra flavor.
- Store leftovers in an airtight container at room temperature for up to 2 days or refrigerate for up to 5 days.
