Description

Apricot Chia Energy Bars are a delicious and nutritious snack that provides a great source of energy, perfect for fueling your day.


Ingredients

  • 1 cup dried apricots, chopped
  • 1 cup rolled oats
  • 1/2 cup almond butter
  • 1/4 cup honey or maple syrup
  • 1/4 cup chia seeds
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/4 cup chopped nuts (optional)

Instructions

  1. In a medium saucepan over low heat, combine the almond butter and honey (or maple syrup) until melted and well mixed. Remove from heat and stir in the vanilla extract and salt.
  2. In a large mixing bowl, combine the chopped dried apricots, rolled oats, chia seeds, and optional chopped nuts.
  3. Pour the almond butter mixture over the dry ingredients and stir until everything is well combined.
  4. Line an 8×8 inch baking dish with parchment paper, leaving some overhang for easy removal. Press the mixture firmly into the bottom of the dish in an even layer.
  5. Refrigerate for at least 2 hours to allow the bars to set.
  6. Once firm, lift the mixture out of the dish using the parchment paper and cut into bars or squares.
  7. Store the energy bars in an airtight container in the refrigerator for up to one week.

Notes

  • For added flavor, try mixing in a teaspoon of cinnamon or a tablespoon of cocoa powder.
  • You can substitute the dried apricots with other dried fruits like cranberries or raisins for a different taste.
