Apricot Chia Energy Bars are a delicious and nutritious snack that provides a great source of energy, perfect for fueling your day.
Ingredients
- 1 cup dried apricots, chopped
- 1 cup rolled oats
- 1/2 cup almond butter
- 1/4 cup honey or maple syrup
- 1/4 cup chia seeds
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/4 cup chopped nuts (optional)
Instructions
- In a medium saucepan over low heat, combine the almond butter and honey (or maple syrup) until melted and well mixed. Remove from heat and stir in the vanilla extract and salt.
- In a large mixing bowl, combine the chopped dried apricots, rolled oats, chia seeds, and optional chopped nuts.
- Pour the almond butter mixture over the dry ingredients and stir until everything is well combined.
- Line an 8×8 inch baking dish with parchment paper, leaving some overhang for easy removal. Press the mixture firmly into the bottom of the dish in an even layer.
- Refrigerate for at least 2 hours to allow the bars to set.
- Once firm, lift the mixture out of the dish using the parchment paper and cut into bars or squares.
- Store the energy bars in an airtight container in the refrigerator for up to one week.
Notes
- For added flavor, try mixing in a teaspoon of cinnamon or a tablespoon of cocoa powder.
- You can substitute the dried apricots with other dried fruits like cranberries or raisins for a different taste.
