Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1/2 cup packed brown sugar
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup dried apricots, chopped
  • 1 cup shredded coconut, unsweetened
  • 1/2 cup pecans, chopped
  • 1/2 cup sweetened condensed milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking dish or line it with parchment paper for easy removal.
  2. In a mixing bowl, combine the flour, rolled oats, brown sugar, and salt. Stir in the melted butter until the mixture resembles coarse crumbs.
  3. Press half of the mixture firmly into the bottom of the prepared baking dish to form the crust.
  4. In another bowl, mix the chopped apricots, shredded coconut, chopped pecans, sweetened condensed milk, and vanilla extract until well combined. Spread this mixture evenly over the crust in the baking dish.
  5. Sprinkle the remaining crumb mixture over the top of the apricot mixture, pressing it down gently.
  6. Bake in the preheated oven for 25-30 minutes, or until the top is golden brown. Allow the bars to cool in the pan for at least 10 minutes before cutting into squares.
  7. For best results, let the bars cool completely before removing them from the pan. This will help them hold their shape better.
