Delicious and chewy Apricot Coconut Pecan Bars, perfect for a sweet treat or dessert.
Ingredients
- 1 cup all-purpose flour
- 1/2 cup rolled oats
- 1/2 cup packed brown sugar
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1 cup dried apricots, chopped
- 1 cup shredded coconut, unsweetened
- 1/2 cup pecans, chopped
- 1/2 cup sweetened condensed milk
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking dish or line it with parchment paper for easy removal.
- In a mixing bowl, combine the flour, rolled oats, brown sugar, and salt. Stir in the melted butter until the mixture resembles coarse crumbs.
- Press half of the mixture firmly into the bottom of the prepared baking dish to form the crust.
- In another bowl, mix the chopped apricots, shredded coconut, chopped pecans, sweetened condensed milk, and vanilla extract until well combined. Spread this mixture evenly over the crust in the baking dish.
- Sprinkle the remaining crumb mixture over the top of the apricot mixture, pressing it down gently.
- Bake in the preheated oven for 25-30 minutes, or until the top is golden brown. Allow the bars to cool in the pan for at least 10 minutes before cutting into squares.
- For best results, let the bars cool completely before removing them from the pan. This will help them hold their shape better.
Notes
- For enhanced flavor, consider adding a pinch of cinnamon or nutmeg to the crust mixture.
- For a chocolate twist, sprinkle some mini chocolate chips over the apricot layer before adding the crumb topping.
