Description

A refreshing and nutritious slaw made with cucumbers, chickpeas, and a flavorful sesame dressing.


Ingredients

  • 2 large cucumbers, thinly sliced
  • 1 can (15 ounces) chickpeas, drained and rinsed
  • 1 cup shredded carrots
  • 1 red bell pepper, thinly sliced
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup green onions, sliced
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon grated fresh ginger
  • 1 teaspoon minced garlic
  • 1 tablespoon sesame seeds

Instructions

  1. In a large bowl, combine the sliced cucumbers, chickpeas, shredded carrots, red bell pepper, cilantro, and green onions.
  2. In a separate small bowl, whisk together the soy sauce, rice vinegar, sesame oil, honey or maple syrup, grated ginger, minced garlic, and sesame seeds until well combined.
  3. Pour the dressing over the slaw mixture and toss gently to coat all the ingredients evenly.
  4. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld.
  5. Serve chilled or at room temperature.

Notes

  • For added crunch, consider topping the slaw with crushed peanuts or cashews before serving.
