A delicious and healthy recipe for asparagus stuffed chicken breast, perfect for dinner.
Ingredients
- 2 boneless, skinless chicken breasts (about 1 pound total)
- 1 cup fresh asparagus, trimmed and cut into 1-inch pieces
- 4 ounces cream cheese, softened
- 1/2 cup shredded mozzarella cheese
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1/2 teaspoon paprika (optional)
Instructions
- Preheat your oven to 375°F.
- In a medium bowl, combine the cream cheese, mozzarella cheese, garlic powder, onion powder, salt, and pepper. Mix until well combined. Fold in the asparagus pieces.
- Using a sharp knife, carefully create a pocket in each chicken breast by slicing horizontally, making sure not to cut all the way through. Season the outside of the chicken breasts with salt, pepper, and paprika if using.
- Stuff each chicken breast with the asparagus and cheese mixture, securing the opening with toothpicks if necessary.
- In an oven-safe skillet, heat the olive oil over medium-high heat. Once hot, add the stuffed chicken breasts and sear for about 3-4 minutes on each side until golden brown.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F.
- Remove from the oven and let rest for 5 minutes before slicing. Serve warm.
Notes
- For a lighter version, substitute the cream cheese with Greek yogurt.
- You can also add sun-dried tomatoes or spinach to the stuffing for extra flavor and nutrition.
- If you prefer, grill the stuffed chicken instead of baking for a smoky flavor.
