Ingredients
- 2 ripe avocados, diced
- 2 cups cherry tomatoes, halved
- 1 small red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1/4 cup olive oil
- 2 tablespoons lime juice
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- In a large bowl, combine the diced avocados, halved cherry tomatoes, and chopped red onion.
- In a small bowl, whisk together the olive oil, lime juice, garlic powder, salt, and pepper.
- Pour the dressing over the avocado and tomato mixture.
- Gently toss everything together until well combined, being careful not to mash the avocados.
- Add the chopped cilantro and toss lightly again.
- Serve immediately or chill in the refrigerator for 15-30 minutes to enhance the flavors.
