Description

Ingredients

  • 1 cup granulated sugar
  • 1/2 cup all-purpose flour
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 1/2 cups milk
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 4 oz (115g) cream cheese, softened
  • 1/4 cup granulated sugar (for cream cheese swirl)
  • 1 egg yolk (for cream cheese swirl)
  • 1 teaspoon lemon juice (for cream cheese swirl)
  • 1/2 teaspoon vanilla extract (for cream cheese swirl)
  • Powdered sugar, for dusting

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a 12-cup muffin tin or line with paper liners.
  2. Prepare the cream cheese swirl. In a small bowl, beat softened cream cheese until smooth. Add sugar, egg yolk, lemon juice, and vanilla. Mix until creamy and set aside.
  3. Make the lemon batter. In a large bowl, whisk together sugar and flour. Add melted butter and mix. Whisk in eggs, then add milk, lemon juice, lemon zest, vanilla extract, and salt. Mix until smooth and well combined. The batter will be thin.
  4. Pour the lemon batter evenly into the prepared muffin cups, filling each about 3/4 full.
  5. Add about 1 teaspoon of the cream cheese mixture on top of each. Use a toothpick or skewer to gently swirl the cream cheese into the batter.
  6. Bake for 22 to 25 minutes or until the tops are lightly golden and the centers are set.
  7. Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  8. Once fully cooled, dust generously with powdered sugar before serving.
