Ingredients

  • 8 large eggs
  • 1 cup whole milk
  • 1 cup cooked and diced potatoes (about 1 medium potato)
  • 6 ounces cooked bacon, chopped
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced onion
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  3. In a large oven-safe skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
  4. Add the cooked potatoes and chopped bacon to the skillet, stirring to combine with the onions. Cook for an additional 2-3 minutes to heat through.
  5. Pour the egg mixture over the potato and bacon mixture in the skillet, ensuring even distribution.
  6. Sprinkle the shredded cheddar cheese on top of the egg mixture.
