A delicious and easy recipe for Bacon and Potato Frittata, perfect for breakfast or brunch.
Ingredients
- 8 large eggs
- 1 cup whole milk
- 1 cup cooked and diced potatoes (about 1 medium potato)
- 6 ounces cooked bacon, chopped
- 1 cup shredded cheddar cheese
- 1/2 cup diced onion
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 375°F (190°C).
- In a large bowl, whisk together the eggs, milk, salt, and pepper until well combined.
- In a large oven-safe skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
- Add the cooked potatoes and chopped bacon to the skillet, stirring to combine with the onions. Cook for an additional 2-3 minutes to heat through.
- Pour the egg mixture over the potato and bacon mixture in the skillet, ensuring even distribution.
- Sprinkle the shredded cheddar cheese on top of the egg mixture.
- Cook on the stovetop for about 5 minutes, or until the edges begin to set.
- Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the frittata is puffed and set in the center.
- Remove from the oven and let cool for a few minutes. Garnish with fresh parsley before slicing and serving.
Notes
- For a veggie twist, add sautéed bell peppers or spinach to the mixture before baking.
- Substitute the bacon with cooked sausage or turkey bacon for a different flavor profile.
