Description

Bacon Cauliflower Schnitzel is a crispy and delicious dish made with cauliflower slices, coated in a flavorful breading and topped with crumbled bacon.


Ingredients

  • 1 large head of cauliflower, cut into 1/2-inch thick slices
  • 4 slices of bacon, cooked and crumbled
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Vegetable oil for frying
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the cauliflower by cutting it into thick slices. Steam the slices for about 5 minutes until slightly tender, then let them cool.
  2. In a bowl, combine flour, garlic powder, onion powder, paprika, salt, and pepper. Mix well.
  3. In another bowl, beat the eggs until well combined.
  4. Place the breadcrumbs in a third bowl.
  5. Dip each cauliflower slice first into the flour mixture, shaking off excess, then into the beaten eggs, and finally into the breadcrumbs, pressing gently to ensure the crumbs adhere.
  6. Heat about 1/4 inch of vegetable oil in a large skillet over medium heat. Once hot, carefully add the breaded cauliflower slices in batches, frying for about 3-4 minutes on each side until golden brown and crispy.
  7. Remove the fried schnitzels and place them on paper towels to drain excess oil. While still hot, sprinkle with crumbled bacon.
  8. Serve warm, garnished with chopped parsley.

Notes

  • For a gluten-free option, substitute all-purpose flour and breadcrumbs with almond flour and gluten-free breadcrumbs.
