Ingredients

  • 2 cups grated zucchini (about 2 medium zucchinis)
  • 1 teaspoon salt
  • 6 slices of bacon, cooked and crumbled
  • 1 cup shredded sharp cheddar cheese
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 2 large eggs
  • 1/4 cup milk
  • 1/4 cup vegetable oil
  • 1 tablespoon chopped fresh chives (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a large bowl, combine the grated zucchini and salt. Let it sit for about 10 minutes to draw out excess moisture, then squeeze out the liquid using a clean kitchen towel or cheesecloth.
  3. In a separate bowl, mix the flour, baking powder, baking soda, garlic powder, onion powder, and black pepper.
  4. In another bowl, whisk together the eggs, milk, and vegetable oil until well combined.
  5. Add the squeezed zucchini, crumbled bacon, and shredded cheddar cheese to the egg mixture and stir until combined.
  6. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. Let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
