Ingredients
- 2 cups grated zucchini (about 2 medium zucchinis)
- 1 teaspoon salt
- 6 slices of bacon, cooked and crumbled
- 1 cup shredded sharp cheddar cheese
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon black pepper
- 2 large eggs
- 1/4 cup milk
- 1/4 cup vegetable oil
- 1 tablespoon chopped fresh chives (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- In a large bowl, combine the grated zucchini and salt. Let it sit for about 10 minutes to draw out excess moisture, then squeeze out the liquid using a clean kitchen towel or cheesecloth.
- In a separate bowl, mix the flour, baking powder, baking soda, garlic powder, onion powder, and black pepper.
- In another bowl, whisk together the eggs, milk, and vegetable oil until well combined.
- Add the squeezed zucchini, crumbled bacon, and shredded cheddar cheese to the egg mixture and stir until combined.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. Let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
- For a spicier kick, add 1/4 teaspoon of cayenne pepper or some diced jalapeños to the batter.
- Substitute the bacon with cooked sausage or turkey bacon for a different flavor profile.
