A quick and easy recipe for a delicious Bacon, Egg, and Cheese Burrito, perfect for breakfast or a snack.
Ingredients
- 4 large eggs
- 4 strips of bacon
- 1 cup shredded cheddar cheese
- 4 large flour tortillas
- 1 tablespoon butter
- Salt and pepper to taste
- Optional: salsa or hot sauce for serving
Instructions
- In a skillet over medium heat, cook the bacon until crispy. Remove from the skillet and place on a paper towel to drain excess grease.
- In the same skillet, melt the butter. Whisk the eggs in a bowl and season with salt and pepper. Pour the eggs into the skillet and scramble until fully cooked, about 3-4 minutes.
- Crumble the cooked bacon and add it to the scrambled eggs. Stir in the shredded cheddar cheese until melted and well combined.
- Warm the flour tortillas in a separate skillet or microwave for about 10-15 seconds until pliable.
- Divide the egg, bacon, and cheese mixture evenly among the tortillas. Fold in the sides and roll up tightly to form burritos.
- If desired, place the burritos seam-side down in the skillet and cook for 1-2 minutes on each side until golden brown and crispy.
- Serve warm with salsa or hot sauce on the side.
Notes
- For a healthier option, substitute turkey bacon for regular bacon and use whole wheat tortillas.
- Add diced bell peppers or onions to the egg mixture for extra flavor and nutrition.
