Description

A delicious twist on a classic grilled cheese sandwich, featuring creamy guacamole and crispy bacon.


Ingredients

  • 4 slices of sourdough bread
  • 4 ounces of cheddar cheese, shredded
  • 4 slices of cooked bacon, crumbled
  • 1 ripe avocado
  • 1 tablespoon lime juice
  • 1 small tomato, diced
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 tablespoons butter

Instructions

  1. In a bowl, mash the avocado with a fork. Stir in lime juice, diced tomato, garlic powder, salt, and pepper until well combined. Set aside.
  2. Heat a skillet over medium heat. While the skillet heats, butter one side of each slice of sourdough bread.
  3. Place two slices of bread, buttered side down, in the skillet. Layer half of the shredded cheddar cheese on each slice.
  4. Spread half of the guacamole mixture over the cheese on each slice, then sprinkle crumbled bacon on top.
  5. Top with the remaining cheddar cheese and place the other two slices of bread on top, buttered side up.
  6. Cook for about 3-4 minutes until the bottom is golden brown. Carefully flip the sandwiches and cook for another 3-4 minutes until the other side is golden and the cheese is melted.
  7. Remove from the skillet, let cool for a minute, then slice and serve.

Notes

  • For a spicier kick, add diced jalapeños to the guacamole mixture.
  • Substitute the cheddar cheese with pepper jack for an extra layer of flavor.
