Ingredients

  • 2 pounds boneless, skinless chicken thighs
  • 8 slices of bacon
  • 1/4 cup Dijon mustard
  • 1/4 cup honey
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 tablespoon chopped fresh parsley (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, mix together the Dijon mustard, honey, garlic powder, onion powder, black pepper, and salt until well combined.
  3. In a large skillet over medium heat, cook the bacon until crispy. Remove the bacon from the skillet and place it on a paper towel-lined plate to drain excess grease.
  4. In the same skillet, add the olive oil and heat. Add the chicken thighs and sear for about 3-4 minutes on each side until golden brown.
  5. Once the chicken is browned, remove it from the skillet and place it in a baking dish.
  6. Brush the mustard mixture generously over each chicken thigh.
  7. Crumble the cooked bacon and sprinkle it evenly over the chicken thighs.
  8. Bake in the preheated oven for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
  9. Remove from the oven and let it rest for 5 minutes before serving. Garnish with chopped parsley.

  • For a smoky flavor, try using smoked bacon or adding a dash of smoked paprika to the mustard mixture.
