Bacon Mustard Chicken is a flavorful dish combining tender chicken thighs with a sweet and tangy mustard glaze, topped with crispy bacon.
Ingredients
- 2 pounds boneless, skinless chicken thighs
- 8 slices of bacon
- 1/4 cup Dijon mustard
- 1/4 cup honey
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1 tablespoon chopped fresh parsley (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- In a small bowl, mix together the Dijon mustard, honey, garlic powder, onion powder, black pepper, and salt until well combined.
- In a large skillet over medium heat, cook the bacon until crispy. Remove the bacon from the skillet and place it on a paper towel-lined plate to drain excess grease.
- In the same skillet, add the olive oil and heat. Add the chicken thighs and sear for about 3-4 minutes on each side until golden brown.
- Once the chicken is browned, remove it from the skillet and place it in a baking dish.
- Brush the mustard mixture generously over each chicken thigh.
- Crumble the cooked bacon and sprinkle it evenly over the chicken thighs.
- Bake in the preheated oven for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
- Remove from the oven and let it rest for 5 minutes before serving. Garnish with chopped parsley.
Notes
- For a smoky flavor, try using smoked bacon or adding a dash of smoked paprika to the mustard mixture.
- If you prefer a spicier kick, add a teaspoon of hot sauce to the mustard blend.
