Description

Indulge in this rich and moist Baileys Chocolate Coffee Cake, perfect for coffee lovers and dessert enthusiasts alike.

Ingredients

  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • ¾ cup unsweetened cocoa powder
  • 1 ½ teaspoons baking powder
  • 1 ½ teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • ½ cup vegetable oil
  • 1 tablespoon vanilla extract
  • 1 cup hot brewed coffee
  • ½ cup Baileys Irish Cream
  • ½ cup unsalted butter, softened (for frosting)
  • 2 cups powdered sugar (for frosting)
  • ¼ cup unsweetened cocoa powder (for frosting)
  • 2 tablespoons Baileys Irish Cream (for frosting)
  • 2 tablespoons whole milk (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
  2. In a large mixing bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Whisk together until well blended.
  3. Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Mix on medium speed for about 2 minutes until smooth.
  4. Stir in the hot coffee and Baileys Irish Cream until fully combined. The batter will be thin.
  5. Pour the batter into the prepared baking pan. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  6. While the cake is baking, prepare the frosting. In a medium bowl, beat the softened butter until creamy. Gradually add the powdered sugar and cocoa powder, mixing until combined.
  7. Add the Baileys Irish Cream and milk to the frosting mixture and beat until smooth and spreadable.
  8. Once the cake has cooled completely, frost the top with the chocolate Baileys frosting.

Notes

  • This recipe serves 12.
  • For a richer flavor, consider adding chocolate chips to the batter before baking.
  • You can substitute the Baileys Irish Cream with a coffee liqueur for a different twist.
