Description

Baked Blueberry Fritters are delightful sweet treats that are easy to make and perfect for breakfast or dessert.


Ingredients

  • 2 cups (250 g) all-purpose flour
  • 1/3 cup (70 g) granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon (optional)
  • 2/3 cup (160 ml) buttermilk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 tablespoons (45 g) unsalted butter, melted
  • 1 1/2 cups (200 g) fresh or frozen blueberries (if frozen, don’t thaw)
  • 1 cup (120 g) powdered sugar (for glaze)
  • 23 tablespoons milk or lemon juice (for glaze)
  • 1/2 teaspoon vanilla extract (optional, for glaze)

Instructions

  1. Preheat oven to 375°F (190°C) and line a large baking sheet with parchment paper or lightly grease it.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon. In another bowl, whisk the buttermilk, eggs, vanilla, and melted butter until combined. Pour the wet ingredients into the dry ingredients and stir gently until just combined — don’t overmix. Fold in the blueberries carefully.
  3. Drop spoonfuls (about 1/4 cup each) of batter onto the baking sheet, spacing them 2 inches apart. Slightly flatten each mound with the back of a spoon.
  4. Bake for 12–15 minutes, or until the fritters are golden brown and cooked through. Let them cool for 5 minutes on the pan, then transfer to a wire rack.
  5. Whisk together powdered sugar, milk (or lemon juice), and vanilla until smooth. Drizzle or brush the glaze over the warm fritters. Allow the glaze to set for 10–15 minutes before serving.

Notes

  • For best results, use fresh blueberries if possible.
  • These fritters can be served warm or at room temperature.
