Ingredients

  • 12 large baking potatoes
  • 1 (200g) block of feta cheese
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 head of garlic (top cut off)
  • 1 lemon, quartered
  • 1 tbsp honey
  • 1/4 cup fresh basil, chopped

Instructions

  1. Preheat Your Oven:
    • Set your oven to 400°F (200°C).
  2. Prepare the Potatoes:
    • Wash and scrub the potatoes thoroughly.
    • Cut them into thick wedges or cubes.
    • Place in a large mixing bowl.
  3. Season the Potatoes:
    • Drizzle olive oil over the potatoes.
    • Sprinkle with thyme, oregano, salt, and black pepper.
    • Toss everything together to coat evenly.
  4. Assemble in a Baking Dish:
    • Transfer seasoned potatoes to a baking dish.
    • Nestle the block of feta in the center.
    • Add the head of garlic and scatter lemon wedges around the pan.
  5. Bake Until Golden & Crispy:
    • Place in the oven and bake for 35-40 minutes, flipping potatoes halfway through.
    • Remove once the potatoes are crispy and the feta is soft and golden.
  6. Finish with Honey & Basil:
    • Drizzle honey over the feta and potatoes.
    • Sprinkle freshly chopped basil on top.
    • Serve immediately while warm and gooey.

Notes

  • Yukon gold, red potatoes, or baby potatoes can be used instead of baking potatoes.
  • Add chili flakes for a spicy kick.
