Ingredients
- 2 medium zucchinis, sliced into 1/4-inch rounds
- 1 cup grated Parmesan cheese
- 1 cup breadcrumbs (preferably Italian seasoned)
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, salt, black pepper, and red pepper flakes if using. Mix well.
- Drizzle the olive oil over the zucchini slices and toss to coat evenly.
- Dip each zucchini slice into the breadcrumb mixture, pressing lightly to ensure they are well-coated.
- Arrange the coated zucchini slices in a single layer on the prepared baking sheet.
- Bake in the preheated oven for 20-25 minutes, or until the zucchini is tender and the tops are golden brown.
- Remove from the oven and let cool for a few minutes before garnishing with fresh parsley. Serve warm.

- For a gluten-free version, substitute regular breadcrumbs with gluten-free breadcrumbs.
