Description

Baklava Muffins are a delicious twist on the traditional baklava, combining the flavors of honey, nuts, and spices in a moist muffin form.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 cup buttermilk
  • 2 large eggs
  • ½ cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 cup chopped walnuts or pistachios
  • ½ cup honey
  • ¼ cup water

Instructions

  1. Preheat the oven to 350°F (175°C). Line a muffin tin with paper liners or grease with cooking spray.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon until well combined.
  3. In another bowl, mix the buttermilk, eggs, melted butter, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix. Gently fold in the chopped nuts.
  5. Divide the batter evenly among the muffin cups, filling each about 2/3 full.
  6. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  7. While the muffins are baking, prepare the honey syrup by combining the honey and water in a small saucepan. Bring to a simmer over medium heat and cook for 5 minutes, stirring occasionally. Remove from heat and let cool slightly.
  8. Once the muffins are done, remove them from the oven and immediately drizzle the honey syrup over the top of each muffin while they are still warm.
  9. Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • For a richer flavor, try adding a teaspoon of almond extract to the wet ingredients.
  • You can also substitute the nuts with a mix of dried fruits like raisins or cranberries for a different twist.
