Ingredients
- 16 large cremini or button mushrooms, stems removed
- 4 ounces goat cheese, softened
- 1/2 cup fresh spinach, chopped
- 1/4 cup dried cranberries, chopped
- 1/4 cup walnuts, chopped
- 2 tablespoons balsamic vinegar
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven to 375°F.
- In a mixing bowl, combine the goat cheese, chopped spinach, dried cranberries, walnuts, garlic powder, salt, black pepper, and red pepper flakes. Mix until well combined.
- Stuff each mushroom cap with the goat cheese mixture, pressing it in gently.
- Place the stuffed mushrooms on a baking sheet lined with parchment paper.
- Drizzle the olive oil and balsamic vinegar over the stuffed mushrooms.
- Bake in the preheated oven for 20-25 minutes, or until the mushrooms are tender and the tops are golden.
- Remove from the oven and let cool for a few minutes. Garnish with chopped parsley before serving.

- For a creamier filling, add 1-2 tablespoons of cream cheese to the goat cheese mixture.
