Ingredients

  • 16 large cremini or button mushrooms, stems removed
  • 4 ounces goat cheese, softened
  • 1/2 cup fresh spinach, chopped
  • 1/4 cup dried cranberries, chopped
  • 1/4 cup walnuts, chopped
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 375°F.
  2. In a mixing bowl, combine the goat cheese, chopped spinach, dried cranberries, walnuts, garlic powder, salt, black pepper, and red pepper flakes. Mix until well combined.
  3. Stuff each mushroom cap with the goat cheese mixture, pressing it in gently.
  4. Place the stuffed mushrooms on a baking sheet lined with parchment paper.
  5. Drizzle the olive oil and balsamic vinegar over the stuffed mushrooms.
