Ingredients

  • 3 ripe bananas, mashed
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups all-purpose flour
  • 8 ounces cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon lemon juice
  • 1/2 teaspoon cinnamon (optional)
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan with cooking spray or butter.
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the mashed bananas, eggs, and vanilla extract to the butter mixture. Mix until well combined.
  4. In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon (if using). Gradually add the dry ingredients to the banana mixture, stirring until just combined.
  5. Pour half of the banana bread batter into the prepared springform pan, spreading it evenly.
