Description
A delightful Banana Caramel Nut Cheesecake that combines the flavors of ripe bananas, creamy cheesecake, and crunchy nuts, topped with rich caramel sauce.
Ingredients
- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 tablespoons granulated sugar
- 16 ounces cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 2 ripe bananas, mashed
- 1 cup caramel sauce (store-bought or homemade)
- 1 cup chopped mixed nuts (such as walnuts and pecans)
- Whipped cream, for topping (optional)
Instructions
- Preheat the oven to 325°F.
- In a medium bowl, combine graham cracker crumbs, melted butter, and 2 tablespoons of sugar. Mix until well combined.
- Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes, then remove from the oven and let cool.
- In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth.
- Gradually add 1 cup of sugar and continue to beat until well blended. Mix in the vanilla extract.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the mashed bananas and half of the caramel sauce until fully incorporated.
- Pour the cream cheese mixture over the cooled crust in the springform pan.
- Sprinkle the chopped nuts evenly over the top.
- Bake for 50-60 minutes, or until the center is set and slightly jiggly.
- Turn off the oven and leave the cheesecake inside for 1 hour to cool gradually.
- Remove the cheesecake from the oven and let it cool to room temperature.
- Once cooled, refrigerate for at least 4 hours or overnight to set completely.
- Before serving, drizzle the remaining caramel sauce over the top and add whipped cream if desired.
Notes
- For a chocolate twist, add ½ cup of cocoa powder to the cream cheese mixture.
- For a lighter version, substitute Greek yogurt for half of the cream cheese.
