Ingredients

  • 1 lb (6 cups) broccoli florets

For the Sauce:

  • 1 tsp fresh ginger, grated
  • 2 tsp garlic, grated (from 3 cloves)
  • 1/2 cup hot water
  • 6 tbsp low-sodium soy sauce
  • 3 tbsp light brown sugar, packed
  • 1 1/2 tbsp cornstarch
  • 1/4 tsp black pepper

Instructions

  1. Prepare Ingredients:
    • Slice the flank steak thinly against the grain. For easier slicing, freeze the steak for 30 minutes.
    • Cut broccoli into even florets.
    • Combine all sauce ingredients in a bowl, stirring until sugar and cornstarch dissolve.
  2. Cook the Broccoli:
    • Heat 1 tbsp of oil in a large skillet over medium heat.
    • Add broccoli and sauté for 4-5 minutes, partially covering with a lid. Stir occasionally until crisp-tender and bright green.
    • For softer broccoli, add 2 tbsp water and steam briefly. Remove from skillet and set aside.
  3. Cook the Beef:
    • Increase heat to high and add the remaining oil.
    • Place beef strips in a single layer in the skillet. Sear for about 2 minutes on each side until cooked through.
    • Transfer beef to a plate and set aside.
  4. Make the Sauce:
    • Lower heat to medium and pour the prepared sauce into the skillet.
    • Simmer for 3-4 minutes, stirring occasionally, until the sauce thickens and coats the back of a spoon.
  5. Combine and Serve:
    • Return beef and broccoli to the skillet. Toss to coat evenly with sauce.
    • Adjust sauce consistency with 1-2 tbsp water if needed.
    • Serve hot over white rice, garnished with sesame seeds if desired.
