- 1 lb (6 cups) broccoli florets

For the Sauce:
- 1 tsp fresh ginger, grated
- 2 tsp garlic, grated (from 3 cloves)
- 1/2 cup hot water
- 6 tbsp low-sodium soy sauce
- 3 tbsp light brown sugar, packed
- 1 1/2 tbsp cornstarch
- 1/4 tsp black pepper
2 tbsp sesame oil
Instructions
- Prepare Ingredients:
- Slice the flank steak thinly against the grain. For easier slicing, freeze the steak for 30 minutes.
- Cut broccoli into even florets.
- Combine all sauce ingredients in a bowl, stirring until sugar and cornstarch dissolve.
- Cook the Broccoli:
- Heat 1 tbsp of oil in a large skillet over medium heat.
- Add broccoli and sauté for 4-5 minutes, partially covering with a lid. Stir occasionally until crisp-tender and bright green.
- For softer broccoli, add 2 tbsp water and steam briefly. Remove from skillet and set aside.
- Cook the Beef:
- Increase heat to high and add the remaining oil.
- Place beef strips in a single layer in the skillet. Sear for about 2 minutes on each side until cooked through.
- Transfer beef to a plate and set aside.
- Make the Sauce:
- Lower heat to medium and pour the prepared sauce into the skillet.
- Simmer for 3-4 minutes, stirring occasionally, until the sauce thickens and coats the back of a spoon.
- Combine and Serve:
- Return beef and broccoli to the skillet. Toss to coat evenly with sauce.
- Adjust sauce consistency with 1-2 tbsp water if needed.
- Serve hot over white rice, garnished with sesame seeds if desired.
