Ingredients

  • 1 pound ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 can (15 ounces) red enchilada sauce
  • 8 corn tortillas
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/4 cup fresh cilantro, chopped (optional)
  • Sour cream, for serving (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, cook the ground beef, onion, and garlic until the beef is browned and the onion is soft, about 5-7 minutes. Drain excess fat.
  3. Stir in the cumin, chili powder, salt, and black pepper. Cook for another minute until fragrant. Remove from heat.
  4. Spread 1/2 cup of the enchilada sauce on the bottom of a 9×13 inch baking dish.
  5. Warm the corn tortillas in a dry skillet or microwave until pliable.
  6. Spoon about 1/4 cup of the beef mixture into each tortilla, roll them up tightly, and place seam-side down in the baking dish.
  7. Pour the remaining enchilada sauce over the rolled tortillas and sprinkle with both cheeses.
  8. Cover the dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
  9. Remove from the oven and let cool for 5 minutes. Garnish with chopped cilantro if desired. Serve with sour cream on the side.
