Description

This sizzling Beef & Pepper Rice Bowl is the ultimate comfort dish—quick, colorful, and loaded with flavor! Juicy ground beef, sweet bell peppers, and a soy-kissed sauce come together over fluffy rice for a fast, filling meal perfect for busy weeknights.

Ingredients

  • 2 tablespoons butter

  • 1 medium onion, diced

  • 1 green bell pepper, diced

  • 1 red bell pepper, diced

  • 1 jalapeño, diced

  • 1 pound ground beef

  • ½ cup soy sauce (use low-sodium if preferred)

  • 1 tablespoon garlic powder

  • 1 teaspoon salt

  • 2 teaspoons black pepper

  • Cooked rice, for serving (white, jasmine, or brown—your choice)

Instructions

  1. In a large skillet over medium heat, melt the butter.

  2. Add diced onion, green bell pepper, red bell pepper, and jalapeño. Cook for about 5 minutes, until slightly softened.

  3. Add the ground beef and cook, breaking it apart with a spatula, until fully browned and the vegetables are tender.

  4. Drain any excess fat from the skillet, then return the beef mixture to the heat.

  5. Stir in the soy sauce, garlic powder, salt, and black pepper. Mix thoroughly and cook for another 2–3 minutes to combine flavors.

  6. Spoon the beef and pepper mixture over bowls of warm cooked rice. Serve immediately and enjoy!

Notes

  • For extra heat, leave the seeds in the jalapeño or add red pepper flakes.

  • Swap ground beef with ground turkey or chicken for a leaner option.

  • Add a drizzle of sriracha or a fried egg on top for an upgrade.

  • Great for meal prep—just store the beef mixture and rice separately for up to 4 days in the fridge.
