Ingredients
For the Stroganoff:
- 1 lb Top Sirloin Steak, thinly sliced
- 2 tbsp Olive Oil
- 2 tbsp Unsalted Butter
- ½ medium Onion, finely chopped
- ½ lb Brown Mushrooms, thickly sliced
- 1 clove Garlic, minced
- 1 tbsp All-Purpose Flour
- 1 cup Beef Broth
- ¾ cup Heavy Whipping Cream
- ¼ cup Sour Cream
- 1 tbsp Worcestershire Sauce
- ½ tsp Dijon Mustard
- ½ tsp Salt
- ¼ tsp Black Pepper
For Serving:
- 8–12 oz Egg Noodles
1 tbsp Green Onion, chopped
Instructions
1. Prepare the Beef:
Heat olive oil in a large pan over medium-high heat. Sear the beef strips in batches until browned on both sides. Remove and set aside.
2. Sauté Vegetables:
Melt butter in the same pan. Add onions and mushrooms, sauté until golden and soft.
3. Make the Sauce:
Add garlic, sauté briefly. Stir in flour and cook for 1 minute. Gradually add beef broth, scraping the pan to deglaze.
4. Add Creaminess:
Stir in heavy cream and simmer until thickened. Temper the sour cream with a little hot sauce mixture, then add to the pan along with Worcestershire sauce, Dijon mustard, salt, and pepper.
5. Combine Beef:
Return beef to the pan and simmer until heated through.
6. Cook Noodles:
While preparing the sauce, cook egg noodles according to package instructions. Drain and toss with a bit of butter.
7. Serve:
Serve the Stroganoff over egg noodles, garnished with chopped green onions.
