Ingredients

For the Stroganoff:

  • 1 lb Top Sirloin Steak, thinly sliced
  • 2 tbsp Olive Oil
  • 2 tbsp Unsalted Butter
  • ½ medium Onion, finely chopped
  • ½ lb Brown Mushrooms, thickly sliced
  • 1 clove Garlic, minced
  • 1 tbsp All-Purpose Flour
  • 1 cup Beef Broth
  • ¾ cup Heavy Whipping Cream
  • ¼ cup Sour Cream
  • 1 tbsp Worcestershire Sauce
  • ½ tsp Dijon Mustard
  • ½ tsp Salt
  • ¼ tsp Black Pepper

For Serving:

  • 812 oz Egg Noodles

1 tbsp Green Onion, chopped


Instructions

1.     Prepare the Beef:
Heat olive oil in a large pan over medium-high heat. Sear the beef strips in batches until browned on both sides.
Remove and set aside.

2.     Sauté Vegetables:
Melt butter in the same pan. Add onions and mushrooms, sauté until golden and soft.

3.     Make the Sauce:
Add garlic, sauté briefly. Stir in flour and cook for 1 minute.
Gradually add beef broth, scraping the pan to deglaze.

4.     Add Creaminess:
Stir in heavy cream and simmer until thickened. Temper the sour cream with a little hot sauce mixture, then add to the pan along with Worcestershire sauce, Dijon mustard, salt, and pepper.

5.     Combine Beef:
Return beef to the pan and simmer until heated through.

6.     Cook Noodles:
While preparing the sauce, cook egg noodles according to package instructions.
Drain and toss with a bit of butter.

7.     Serve:
Serve the Stroganoff over egg noodles, garnished with chopped green onions.

Notes

  • Use top sirloin or a tender cut for best results.
