Ingredients
For the Beef:

1 pound lean ground beef

For the Dressing:

For the Salad:

6 cups chopped romaine lettuce

10 oz grape or cherry tomatoes, halved

½ small red onion, chopped

1 cup shredded cheese (cheddar or Mexican blend)

½ cup canned corn, drained

½ cup black beans, drained and rinsed

½ avocado, sliced or chopped

1 cup Doritos, broken into bite-sized pieces

1 tablespoon chopped fresh cilantro (optional)

Salt and pepper, to taste
Instructions

Cook the beef: In a skillet over medium-high heat, add olive oil. Once hot, add the ground beef and seasonings (chili powder, garlic powder, onion powder, smoked paprika, and cumin). Cook for 8 to 10 minutes, breaking up the meat until fully browned. Drain excess fat if needed and let cool slightly.

Make the dressing: In a small bowl, mix together sour cream and salsa. Add fresh lime juice to taste. If the dressing is too thick, add a little water or extra lime juice to thin it out.

Assemble the salad: In a large mixing bowl, combine chopped romaine, tomatoes, red onion, cheese, corn, black beans, avocado, and cilantro.

Add the beef and chips: Once the beef has cooled a bit, add it to the salad. Toss in the Doritos.

Dress and serve: Toss the salad with the dressing or drizzle on top. Season with salt and pepper. Serve immediately for the best texture.
