Description

This Baked Berry Croissant Casserole is the ultimate combination of flaky croissants, sweet berries, and a luscious cream cheese filling. Perfect for a weekend brunch, special occasions, or even as a dessert with a scoop of ice cream!

Ingredients

  • 4 large croissants, broken into bite-sized pieces (use fully baked croissants, not dough)
  • 1 cup sliced strawberries (fresh for the best flavor)
  • ½ cup blueberries (juicy and sweet)
  • ½ cup raspberries (for a tart balance)
  • 8 ounces cream cheese, softened (room temperature ensures a smooth texture)
  • ⅔ cup granulated sugar (for the perfect sweetness)
  • ¾ cup milk (whole milk is recommended for richness)
  • 2 large eggs (to bind everything together)
  • 2 teaspoons vanilla extract (for a warm depth of flavor)

Instructions

  1. Preheat & Prep
    • Heat oven to 350°F (175°C).
    • Grease a 9×9-inch baking dish with cooking spray.
  2. Layer the Goodness
    • Spread croissant pieces evenly in the dish.
    • Sprinkle strawberries, blueberries, and raspberries over the croissants.
  3. Create the Creamy Mixture
    • Beat cream cheese with an electric mixer until fluffy.
    • Gradually add sugar, milk, eggs, and vanilla. Mix until smooth.
  4. Assemble & Chill
    • Pour the cream cheese mixture evenly over the croissants and berries.
    • Cover and refrigerate for at least 15 minutes, or up to 14 hours for an overnight option.
  5. Bake to Perfection
    • Remove cover and bake for 35-40 minutes, until golden and set in the center.
    • Let cool for 10 minutes before serving.
  6. Serve & Savor
    • Enjoy warm, topped with powdered sugar or syrup, if desired.

Notes

  • Swap croissants for brioche or challah for a different texture.
  • Add a sprinkle of cinnamon or nutmeg for extra warmth.
  • Leftovers can be stored in the fridge for up to 3 days and reheated.
