Delightful Berry Swirl Cheesecake Bites that are perfect for dessert or a sweet snack.
Ingredients
- 8 ounces cream cheese, softened
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 large egg
- 1/2 cup sour cream
- 1/2 cup mixed berries (fresh or frozen, such as strawberries, blueberries, and raspberries)
- 2 tablespoons powdered sugar
- 1 teaspoon lemon juice
- 1/4 teaspoon salt
- Graham cracker crumbs for crust (about 1 cup)
- 1/4 cup unsalted butter, melted
Instructions
- Preheat your oven to 325°F. Line a mini muffin tin with paper liners or spray with non-stick cooking spray.
- In a medium bowl, combine the graham cracker crumbs and melted butter. Mix until the crumbs are evenly coated. Press about 1 tablespoon of the mixture into the bottom of each muffin cup to form a crust.
- In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Add the granulated sugar, vanilla extract, and salt, mixing until well combined. Add the egg and sour cream, mixing until smooth and creamy.
- In a small bowl, mash the mixed berries with powdered sugar and lemon juice until you have a chunky sauce.
- Spoon the cheesecake batter into each muffin cup, filling them about 2/3 full. Drop a teaspoon of the berry sauce on top of each cheesecake bite and use a toothpick or skewer to swirl the berry sauce into the cheesecake batter.
- Bake in the preheated oven for 18-20 minutes, or until the edges are set and the centers are slightly jiggly. Remove from the oven and let cool to room temperature. Once cooled, refrigerate for at least 2 hours to set.
- Serve chilled. Enjoy as a delightful dessert or a sweet snack.

- For a gluten-free option, use gluten-free graham cracker crumbs.
