Description
A delicious and moist chocolate poke cake topped with marshmallows and whipped topping, perfect for any occasion.
Ingredients
- 2 cups all-purpose flour
- 2 cups granulated sugar
- 3/4 cup unsweetened cocoa powder
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 2 large eggs
- 1 cup whole milk
- 1/2 cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water
- 1 cup chocolate fudge sauce
- 1 cup mini marshmallows
- 1 cup whipped topping (like Cool Whip)
- Chocolate shavings or sprinkles for garnish (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
- In a large mixing bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Whisk together until well blended.
- Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Beat on medium speed for 2 minutes until smooth.
- Carefully stir in the boiling water until the batter is well combined (the batter will be thin).
- Pour the batter into the prepared baking pan and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- Once baked, remove the cake from the oven and let it cool in the pan for about 15 minutes.
- Using the handle of a wooden spoon or a fork, poke holes all over the top of the cake, about 1 inch apart.
- Pour the chocolate fudge sauce evenly over the cake, making sure it seeps into the holes.
- Allow the cake to cool completely, then top it with mini marshmallows and spread the whipped topping evenly over the marshmallows.
- For added decoration, sprinkle chocolate shavings or sprinkles on top if desired. Refrigerate for at least 1 hour before serving.
Notes
- For a richer flavor, use dark chocolate cocoa powder instead of regular cocoa powder.
- You can substitute the chocolate fudge sauce with caramel sauce for a different twist.
