Ingredients

  • 1 pound ground chicken
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup plain Greek yogurt
  • 1/4 cup breadcrumbs
  • 2 cloves garlic, minced
  • 1 tablespoon fresh oregano, chopped (or 1 teaspoon dried oregano)
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon lemon zest
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 4 whole wheat hamburger buns
  • 1 cup mixed greens
  • 1 tomato, sliced
  • 1 cucumber, sliced
  • Olive oil for grilling

Instructions

  1. In a large bowl, combine the ground chicken, feta cheese, Greek yogurt, breadcrumbs, garlic, oregano, parsley, lemon zest, salt, black pepper, and red pepper flakes. Mix until just combined, being careful not to overwork the meat.
  2. Divide the mixture into four equal portions and shape each portion into a patty about 1/2 inch thick.
  3. Preheat a grill or grill pan over medium heat. Lightly brush the grill with olive oil to prevent sticking.
  4. Cook the chicken patties for about 5-6 minutes on each side, or until the internal temperature reaches 165°F and the patties are golden brown.
  5. During the last minute of cooking, place the hamburger buns on the grill to toast lightly.
  6. Assemble the burgers by placing a chicken patty on each bun, then topping with mixed greens, tomato slices, and cucumber slices. Add additional Greek yogurt or tzatziki sauce if desired.

Notes
