Description
Delicious and crispy fritters made with fresh sweet corn and zucchini, perfect as a snack or appetizer.
Ingredients
- 2 cups fresh sweet corn kernels (about 3 ears of corn)
- 1 medium zucchini, grated (about 1 cup)
- 1/2 cup all-purpose flour
- 1/2 cup cornmeal
- 2 large eggs
- 1/4 cup milk
- 1 teaspoon baking powder
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup chopped fresh parsley (optional)
- Vegetable oil for frying
Instructions
- In a large bowl, combine the sweet corn kernels and grated zucchini. Squeeze out excess moisture from the zucchini using a clean kitchen towel or paper towels.
- In another bowl, whisk together the flour, cornmeal, baking powder, garlic powder, onion powder, salt, and black pepper.
- In a separate bowl, beat the eggs and then stir in the milk. Add the egg mixture to the dry ingredients and mix until just combined.
- Fold in the corn and zucchini mixture, along with the chopped parsley if using, until evenly incorporated.
- Heat about 1/4 inch of vegetable oil in a large skillet over medium heat. Once the oil is hot, drop spoonfuls of the batter into the skillet, flattening them slightly with the back of the spoon.
- Fry the fritters for about 3-4 minutes on each side, or until golden brown and crispy. Remove from the skillet and drain on paper towels.
- Serve warm with your favorite dipping sauce or a dollop of sour cream.
Notes
- For a spicier kick, add 1/4 teaspoon of cayenne pepper or chopped jalapeños to the batter.
- Substitute the zucchini with grated carrots or yellow squash for a different flavor and texture.
