Description
A creamy and flavorful chicken gnocchi soup that rivals the famous Olive Garden version.
Ingredients
- 2 tablespoons olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 medium carrots, diced
- 2 celery stalks, diced
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 cups chicken broth
- 1 pound cooked chicken breast, shredded
- 1 cup heavy cream
- 1 pound potato gnocchi
- 2 cups fresh spinach
- 1/2 cup grated Parmesan cheese
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the diced carrots and celery to the pot, cooking for about 5 minutes until they begin to soften. Sprinkle in the thyme, basil, salt, and black pepper, stirring to combine.
- Pour in the chicken broth and bring the mixture to a boil. Once boiling, reduce the heat and let it simmer for 10 minutes.
- Add the shredded chicken and heavy cream to the pot, stirring well. Bring back to a gentle simmer.
- Stir in the gnocchi and cook according to package instructions, usually about 3-5 minutes, until they float to the top.
- Add the fresh spinach and cook for an additional 2 minutes until wilted.
- Remove from heat and stir in the grated Parmesan cheese until melted and well combined.
- Serve hot, garnished with extra Parmesan if desired.
Notes
- For a creamier soup, consider adding an extra 1/2 cup of heavy cream.
- If you want a lighter version, substitute half-and-half for the heavy cream.
- For added flavor, try incorporating a splash of lemon juice or a pinch of red pepper flakes for a bit of heat.
