Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced

  • 2 celery stalks, diced

  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 cups chicken broth
  • 1 pound cooked chicken breast, shredded
  • 1 cup heavy cream
  • 1 pound potato gnocchi
  • 2 cups fresh spinach
  • 1/2 cup grated Parmesan cheese

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.
  2. Add the diced carrots and celery to the pot, cooking for about 5 minutes until they begin to soften. Sprinkle in the thyme, basil, salt, and black pepper, stirring to combine.
  3. Pour in the chicken broth and bring the mixture to a boil. Once boiling, reduce the heat and let it simmer for 10 minutes.
  4. Add the shredded chicken and heavy cream to the pot, stirring well. Bring back to a gentle simmer.
  5. Stir in the gnocchi and cook according to package instructions, usually about 3-5 minutes, until they float to the top.
  6. Add the fresh spinach and cook for an additional 2 minutes until wilted.
  7. Remove from heat and stir in the grated Parmesan cheese until melted and well combined.
  8. Serve hot, garnished with extra Parmesan if desired.
