Ingredients

  • 2 cups whole milk
  • 1 cup heavy cream
  • 1 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 3 ripe bananas, sliced
  • 1 cup Biscoff cookies, crushed
  • 1/2 cup caramel sauce (store-bought or homemade)
  • Whipped cream for topping

Instructions

  1. In a medium saucepan, whisk together the milk, heavy cream, sugar, cornstarch, and salt over medium heat.
  2. Continue whisking until the mixture thickens and begins to bubble, about 5-7 minutes.
  3. Remove from heat and stir in the vanilla extract.
  4. In a 9×9-inch baking dish, layer half of the crushed Biscoff cookies on the bottom.
  5. Add half of the sliced bananas on top of the cookies.
  6. Pour half of the pudding mixture over the bananas, spreading it evenly.
  7. Repeat the layers with the remaining Biscoff cookies, bananas, and pudding mixture.
  8. Drizzle the caramel sauce over the top layer of pudding.
  9. Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight for best results.
