Description
A rich and creamy cheesecake with layers of cherry pie filling and a chocolate cookie crust, topped with whipped cream and chocolate shavings.
Ingredients
- 16 ounces cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup sour cream
- 1 cup heavy cream
- 1 cup cherry pie filling
- 1 cup chocolate cookie crumbs
- 4 tablespoons unsalted butter, melted
- 1/4 cup cocoa powder
- 1/4 cup powdered sugar
- Chocolate shavings for garnish (optional)
Instructions
- Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan and set aside.
- In a medium bowl, combine chocolate cookie crumbs and melted butter. Mix until well combined. Press the mixture firmly into the bottom of the prepared springform pan to form the crust. Bake for 10 minutes, then remove from the oven and let cool.
- In a large mixing bowl, beat the softened cream cheese with granulated sugar and vanilla extract until smooth and creamy.
- Add the eggs one at a time, mixing well after each addition. Then, mix in the sour cream until fully incorporated.
- Pour half of the cheesecake batter over the cooled crust. Spoon half of the cherry pie filling over the batter. Pour the remaining cheesecake batter on top, followed by the rest of the cherry pie filling.
- Bake in the preheated oven for 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and crack the door, allowing the cheesecake to cool slowly for about 1 hour.
- Remove the cheesecake from the oven and let it cool to room temperature. Once cooled, refrigerate for at least 4 hours or overnight for best results.
- Before serving, whip the heavy cream with powdered sugar and cocoa powder until soft peaks form. Spread or pipe the whipped cream over the top of the cheesecake. Garnish with chocolate shavings if desired.
Notes
- For a richer flavor, consider adding a splash of almond extract to the cheesecake batter.
- You can substitute the cherry pie filling with raspberry or strawberry filling for a different fruit twist.
