Description

Ingredients

Filling:

  • 1 ½ cups shredded unsweetened coconut

  • ½ cup frozen blackberries, thawed

  • 2 tablespoons maple syrup

  • ½ teaspoon vanilla extract

Chocolate Coating:

  • ¾ cup dairy-free chocolate chips

  • 1 tablespoon coconut oil


Instructions

  1. Blend Filling: Combine coconut, thawed blackberries, maple syrup, and vanilla extract in a food processor. Blend until thick and sticky.

  2. Form Bars: Line a 5×7-inch dish with parchment paper. Press the coconut-blackberry mixture firmly into the dish. Freeze for 1–2 hours until set.

  3. Slice and Chill: Cut mixture into 6–8 bars. Return bars to the freezer.

  4. Dip in Chocolate: Melt chocolate chips with coconut oil (using microwave or stovetop). Dip each frozen bar into the melted chocolate, ensuring full coverage.
