Description
A delicious and rich Blueberry Brownie Cheesecake that combines the flavors of creamy cheesecake, fresh blueberries, and decadent brownie.
Ingredients
- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup granulated sugar
- 1 (8-ounce) package cream cheese, softened
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 1 cup sour cream
- 1 cup fresh blueberries
- 1 cup brownie mix (plus ingredients required on the box, usually 1/4 cup water, 1/4 cup vegetable oil, and 1 large egg)
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9-inch springform pan.
- In a medium bowl, combine graham cracker crumbs, melted butter, and 1/4 cup sugar. Press the mixture firmly into the bottom of the prepared springform pan to form the crust. Bake for 10 minutes, then remove from the oven and let cool.
- In a large mixing bowl, beat the softened cream cheese with 1/2 cup sugar and vanilla extract until smooth and creamy. Add the eggs one at a time, mixing well after each addition. Stir in the sour cream until fully combined.
- Gently fold in the fresh blueberries into the cream cheese mixture. Pour the cream cheese mixture over the cooled graham cracker crust.
- Prepare the brownie mix according to the package instructions. Pour the brownie batter over the cheesecake layer in the springform pan. Use a knife or skewer to swirl the brownie batter into the cheesecake layer for a marbled effect.
- Bake for 50-60 minutes, or until the edges are set and the center is slightly jiggly. Turn off the oven and leave the cheesecake inside for an additional hour to cool gradually.
- Remove the cheesecake from the oven and let it cool to room temperature. Refrigerate for at least 4 hours or overnight before serving.
Notes
- For a richer flavor, try adding a teaspoon of lemon zest to the cream cheese mixture.
- You can also substitute the blueberries with raspberries or strawberries for a different fruit twist.
