Description

A delicious and rich Blueberry Brownie Cheesecake that combines the flavors of creamy cheesecake, fresh blueberries, and decadent brownie.


Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 1 (8-ounce) package cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup sour cream
  • 1 cup fresh blueberries
  • 1 cup brownie mix (plus ingredients required on the box, usually 1/4 cup water, 1/4 cup vegetable oil, and 1 large egg)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch springform pan.
  2. In a medium bowl, combine graham cracker crumbs, melted butter, and 1/4 cup sugar. Press the mixture firmly into the bottom of the prepared springform pan to form the crust. Bake for 10 minutes, then remove from the oven and let cool.
  3. In a large mixing bowl, beat the softened cream cheese with 1/2 cup sugar and vanilla extract until smooth and creamy. Add the eggs one at a time, mixing well after each addition. Stir in the sour cream until fully combined.
  4. Gently fold in the fresh blueberries into the cream cheese mixture. Pour the cream cheese mixture over the cooled graham cracker crust.
  5. Prepare the brownie mix according to the package instructions. Pour the brownie batter over the cheesecake layer in the springform pan. Use a knife or skewer to swirl the brownie batter into the cheesecake layer for a marbled effect.
  6. Bake for 50-60 minutes, or until the edges are set and the center is slightly jiggly. Turn off the oven and leave the cheesecake inside for an additional hour to cool gradually.
  7. Remove the cheesecake from the oven and let it cool to room temperature. Refrigerate for at least 4 hours or overnight before serving.

Notes
